Course Description

Overview

Nutrition, food composition, and dietary health play a pivotal role in preventing disease, promoting public health, and driving innovation across the global food industry. Students enrolled in the Bachelor of Science (Food and Human Nutrition) at The University of Sydney examine the biological, chemical, and behavioral sciences that connect food production, human metabolism, and population health outcomes. The curriculum pairs rigorous fundamental science in chemistry, biochemistry, and physiology with specialized study in food processing, nutritional assessment, and dietary public policy. Learners engage directly with active health researchers and food scientists inside modern biochemistry laboratories, food technology facilities, and sensory analysis suites. Integrated industry projects and practical laboratory training bridge theoretical principles with real-world applications in product development and community nutrition. This program suits analytical, health-conscious problem solvers who wish to improve population health and advance sustainable food systems.

What You'll Learn

Human anatomy, systemic physiology, biological chemistry, and metabolic pathways

Food chemistry, composition, functional properties of food, and sensory evaluation

Nutritional biochemistry, macro nutrient and microcontroller metabolism, and human energy balance

Food processing technology, preservation methodologies, quality assurance, and food safety standards

Human nutrition across the lifespan, maternal and child health, and clinical nutrition principles

Public health nutrition, dietary assessment methods, health promotion, and nutrition policy

Food product development, innovation strategies, packaging, and commercialization pathways

Molecular biology, research design, biostatistics, and nutritional epidemiology

Professional scientific practice, ethics, and collaborative industry or community research projects

Learning Outcomes

Graduates will acquire a comprehensive understanding of human nutrition, food science, and the metabolic processes that govern human health and performance. They will master the capacity to critically analyze nutritional data, evaluate food production methods, and design evidence-based dietary interventions or innovative food products. Through hands-on laboratory experiments, food development projects, and practical health evaluations, students build technical competence in food testing, nutritional assessment, and scientific communication. Furthermore, the interdisciplinary curriculum equips individuals with the knowledge and professional skills needed to pursue dynamic careers across public health organizations, food manufacturing industries, regulatory agencies, sports nutrition, and postgraduate research.
